Tomato Egg Drop Soup

There is no another Chinese soup dish going to be easier than this tomato egg drop soup.

one medium size tomato

one egg ( beat up)

a big bowl of broth or water

Cook the tomato in boiling water for 2-3 minutes so you can easily peel the skin off. Cut the tomato into small pieces.  In a pan, add a little bit of oil and sauteed the white part of scallion for 2 minutes then add tomato and broth ( water is fine too) bring it to boil then add in beaten egg. If you like the egg drop to be big, stir the broth slowly, otherwise, stir really fast then the egg drop is going to be small. Add in some salt and chicken powder to the taste.

Bread Machine Made Bread

1. 蜂蜜 3TBSP

2. 水 1/3 + 1/4 cup

3. 蛋 1个 (打匀)

4. 盐 1/2 tsp

5. 椰子粉 or 奶粉 1TBSP (optional )

6. 高筋面粉 2 cups

7. 酵母 2 tsp

8. 黄油 2 TBSP (半融化)

另:一个蛋打散留作刷表面。
按面包机的顺序要求加材料1-8,选 Dough档和面,和面并第一次发酵后拿出来整理编辫子,放回面包机盒子里第二次发酵,(拿掉搅拌小翅膀)等到 发大后刷上蛋液,撒点椰子屑,选单独Baking档. 选crust中度, 烤50分钟。

1. Honey 3TBSP

2. Water 1/3 + 1/4 cup

3. Egg 1 ( beat up)

4. Salt 1/2 tsp

5. shredded coconut or dried milk powder 1TBSP (optional)

6. Bread flour 2 cups

7. Bread yeast 2 tsp

8. Butter 2 TBSP (half melted)

In addition: another egg slightly beat up reserved for bread surfaces.

By bread machine’s order requirements add in ingredients 1-8, selected Dough. Take it out after first fermentation, divide the dough into 3 even pieces then make braids. After that put it back to bread machine for second fermentation. 2 minutes before the second fermentation is done brush the top with beaten egg then add the shredded coconut. Select Baking with the medium crust and bake for 50 minutes.

Dishes From Left Over Roast Chicken Or Turkey

Before we know Thanksgiving will be here. You always have some leftover turkey after each thanksgiving, what you can do with it? Yesterday I had more than half left over roast chicken I bought from Costco. So I am going to tell you what I did with it. All the recipes work fine with Turkey too.

Chicken breast is good for sandwich, Panini,  wrap or even salad. I am only going to tell you the dishes I had already done. If I create more dishes with the left over later, I will update this post.

Chicken wrap

Cut the chicken breast into small pieces and add some same size celery or cucumber and some dry cranberries. My favor thing to add to it is mayonnaise. You can use any kind of wrap to make a yummy chicken wrap. Have a cup of tea and in less than 10 minutes, I have the yummy lunch ready

Chicken noodle soup

After I used the chicken breast, I still had the dark meat and the chicken frame. Cut the dark meat into small pieces too and use the frame to cook broth for chicken noodle soup.

In a big cooking pot, add water and chicken frame and cook 30 minutes with medium low heat for brother.

Cut some vegetable such as carrot, onion and celery and a little bit of garlic. In a sautéed pan add some butter add in all the vegetable and sweat them for a few minutes until they are all tender, add a pinch of salt and black pepper ( chicken was already flavored with salt and pepper, so don’t put too much here) add in the broth then simmer for 15-20 minutes. In a separated pot, bring some water to boil, add a pinch of salt, and cook some bow ties. When the vegetable is almost ready, add in bow ties and dark meat then cook 2, 3 more minutes

Panini

One day after I cooked soup, I still had some chicken breast left. I opened my refrigerator and I only found some cheddar cheese and wrap. I didn’t feel like to eat wrap. So I created my own version of Panini. I spread the cheese and chicken over half of the wrap and fold the other half over. I grilled it for a few minutes. The result: super juicy and yummy.

Cooking should be fun and creative. Don’t be afraid of doing something different, Lol… At least I am not.

Pine Nuts Shrimps/玉米虾炒松仁

2 fresh yellow corns,cut the corn off the cob
A little bit of green and red pepper for color
1/3 cup of pine nuts
A few pieces of shrimps
Peeled, deveined and marinated shrimps with salt, white pepper and cooking wine, precook in boiling water and set aside.
In a non-stick pan, with oil at medium heat add the pine nuts and cook less than 2 minutes (pine nuts get burn easily) set aside.
With some oil in the pan, add garlic then the corn, green and red pepper and sautéed for a few minutes. Add 1/3 teasp of salt, a little bit of sugar and 1/3 cup of water then cover with a lid and cook for 2 more minutes. Add chicken powder and pine nuts.

Sour Potatoes/ 醋溜土豆丝

This dish is so easy to make and you will be surprised to find out how delicious it could be. Try it.

3-4 medium size Potatoes Shred those as thin as you can.

In a really big bowl rinse the shredded potatoes until you see the water run clear, drain.

In a hot sauteed pan, add oil then a few pieces of garlic, when the oil is hot adds the potatoes in and sauteed for a few minutes, add 1teasp of salt, 1/3 cup of water or broth cover with a lid then cook for 2 minutes. Add 2 tbsp. of vinegar and 1 tbsp. of sugar and a little bit of chicken powder. Sprinkle some green onion for garnish.

Roast Mix Vegetable/烤蔬菜

As per my friend’s  request that I should post something easy for beginner. I think there is nothing easier than this dish. It is healthy, yummy and easy to make.

Mix any kind of vegetable that you have from you refrigerator. ( I used 1/3 purple cabbage, 1/2 Japanese pumkin, 1 Medium size carrot, a few cherry tomatoes, one zucchini, one  onion and 3 medium size potatoes) cut them into cubes. add a little bit of salt and black pepper and some extra virgin olive oil, mix well. bake in the 400 F preheated over for one hour. Of course it depends on how much vegetable you have. use your fork to stick into potatoes, if it is done then the rest vegetables are done too.

混 合任何几種你冰箱裡有的蔬菜。(我用 1/3 的紫甘藍、 1/2 日本南瓜、 1 中等大小的胡蘿蔔,幾個櫻桃番茄、 一個西葫蘆、 一個洋蔥和 3 中等大小土豆)切小块。 添加一點點的鹽和黑胡椒和一些特級橄欖油,拌勻。在 400 F 預熱的烤箱里烘烤大约一個小時。當然這取決於你有多少蔬菜。用叉子叉插土豆,如果它熟了剩下的菜就可以了。

¼ head of cabbage

1 pound of beef

2 stalk of celery

One medium size tomato

½ purple onion

1 medium size carrot

2 small red skinned potatoes

Tomato sauce 4 oz.

Cube everything. Seal each side of beef until golden brown by pan fried them in a hot nonstick pan. Take beef out the pan, add some butter to the pan, add some minced garlic then sautéed all the vegetable for a few minutes until they are tender, and add a few pinch of salt. Add in one quart of water or broth, tomato sauce then beef and bring it to boil with medium high heat. Then reduce the heat to medium low and cook for another 30 minutes. You can add a little sugar if you like it to be a little bit of sweet and sour at the same time.( I prefer it to be sweet and sour) Add more salt and black pepper if needed.

 

¼ 的捲心菜,

1 磅牛肉

In a big cooking pan add enough water to cook 6 pieces of wings. Bring the water to boil add 2-3 pieces of ginger, cook the wings in the boiling water until the juice running out of the wing is clear when you stick a fork into it.

Cool the wing to the room temperature, and then add enough pickle sauce to cover all the wings. Leave them in the refrigerator for at least 6 hours. For the best result 24 hours is recommended. This recipe is also good for chicken feet and pig feet.

糟卤鸡翅

在大鍋中添加足夠的水來煮其余6只翅膀 。把水燒開加 2-3 片生薑,放鸡翅进去煮到鸡翅用叉子叉进去时流出的水没有血水。

鸡翅冷卻到室溫,然後加入足夠的糟卤要覆蓋所有的翅膀。放在冰箱裡至少 6 小時。建議 24 小時有最好的結果。這個配方也适用于雞爪和豬腳。

Pepper Steak With Onion/青椒牛

5 oz. of shredded beef

Half green pepper (shredded)

One small yellow onion (shredded)

One cup of water adds in ½ teasp of baking soda, leave beef in it for 15 minutes. Rinse the beef under the running water for 1 minute. Drain the beef then marinate it with salt, white pepper, 1/2tbsp of starch and a little bit of cooking wine for 30 minutes.

In a hot nonstick pan add 3 tbsp oil, sautéed the beef until it turns color, set aside.

Add the shredded onion with the rest oil in the pan and sautéed until they are soft then add the green pepper and beef. Add 1/2 tbsp. of oyster sauce, 1/2teasp. of soy sauce and 1/2 tbsp. of cooking wine and sautéed for another 2 minutes.
