Here I want to share with you guys the Christmas tree and Snow flake bread I made this morning. Good life, healthy eating! Cheers!!!
One whole free ranged chicken 5 pounds
Lemongrass 2 sticks
Ginger 4 slices +5 tbsp minced
Scallion 3/4 cup minced
White rice 7 cups
Minced Red Shallots1/3 cup
Pandan leaves a few pieces
Chicken oil 4 tbsp ( take the fat from the chicken and cook for a few minutes)
In a skillet add 1/3 cup of oil, heat up for 2 minutes then add 1/2 stick of minced lemon grass, minced ginger and scallion and cook until aromatic about 4 minutes. Add 3/4 tbsp salt and 2 tsp chicken powder.
Have a big container of water with ice ready for chicken. In a big pot add enough water so you can later cover the whole chicken in it. Add sliced ginger, 1tsp of salt and the rest lemongrass then bring the water to boil, add the whole chicken to the boiling water for 10 seconds, take the chicken out and put into the ice water for 1 minute. Repeat the same processes for 2 more times. Then leave the chicken in the boiling water for 20 – 25 more minutes with low heat. After that turn the heat off and cover for 15 more minutes. Take the chicken out and leave it cool for 15 minutes then cut.
Mince 1/3 cup Shallots. Add chicken fat and shallots to a skillet saute until aromatic.
Add the washed rice (7 cups) continue sauté until the rice is dried.
Pour all the rice to a rice cooker with 7 cups of chicken broth.
Add a few pieces of pandan leaves and 1-2tsp of salt then cook.

有一大盆子里加水与冰，用于泡鸡。在大鍋中添加足夠的水來覆蓋整只雞。加入切好的姜，1 茶匙的鹽和其餘香茅然後把水煮开，把整雞加到沸水 中10 秒鐘，拿出並放入冰水中的 1 分鐘。再重複同樣的過程2 次。然後用小火煮雞 20 — 25 分鐘。关火后再泡 15 分鐘。取出雞冷卻 15 分鐘再切。
加雞油在一個煎鍋里接着加紅蔥头炒到发出香味后加入洗好的大米炒到米粒乾了为止。倒入到電飯煲里，加 7 杯刚刚煮鸡的水，加幾片香蘭葉和 1-2 茶匙的鹽 摁下煮饭键煮。
I ate a very healthy and delicious home made breakfast this morning.
3 large banana
2 cup of milk
1.5 cup of plain yogurt
2tbsp of honey
put everything into the blender and blend for a few minutes.
Cinnamon raisin bread.
1.5 lb loaf
1 cup water
1 1/2 tsp salt
1/4 cup sugar
2 tbsp nonfat dry milk
2 tbsp butter or vegetable oil
2 3/4 cup bread flour
1 1/2 tsp cinnamon
2 tsp bread machine yeast
3/4 cup raisins
Add ingredients to bread machine as directed by bread machine processure. All liquors first then flour then the rest of ingredients. Add raisins at add ingredient signal. Breadmaker will beep 10 times about 30 mintues after the cycle begins.

Flour 1 3/4 cup
Baking Powder 1tsp
Vanilla extract 2 tsp
Almond extract 1/2tsp
Salt ¼ tsp
Mix nuts 1/2 cup
Apricot 1/4 cup
Dried cranberry 1/4 cup
Preheat the oven to 300 degrees F (150 degrees C).
Beat together the butter, eggs, sugar, vanilla extract and almond extract until well blended.
Combine the flour, salt and baking powder in a separated bowl.
Add the butter egg mixture to the flour mixture.
Add the rest ingredients to the mixture.
Divide dough into two pieces. Form each piece into a roll as long as your cookie sheet. Place a parchment paper on the cookie sheet then roll the dough onto it, and press down to 1/2 inch thickness.
Bake for 35 minutes in the preheated oven, until golden brown. Remove from the baking sheet to cool on a wire rack.
When the cookies are cool enough to handle about 10 to 15 minutes, slice each one crosswise into 1/2 inch slices.
Place the slices cut side up back onto the baking sheet. Bake for an additional 8- 10 minutes on each side. It is best when you eat it with coffee.

2 pieces of pork chops
Two cups of sliced white mushroom
Some minced garlic
¼ cup white wine
¼ cup chicken stock
4 tbsp. half and half
1 tbsp. flour
Smash the pork chops hard with a meat hammer tenderizer so they will become very thin. Marinate the pork with salt, black pepper and cooking wine overnight.
In a hot skillet add some oil and pan fry the pork chops until golden brown for each side total about 6，7 minutes.
In a separated pan, add 2tbsp of butter and sautéed white mushrooms and 1 tsp. minced garlic for about 5 minutes. Add 1/4 cup of white wine and reduce until it’s almost evaporated. Add ¼ cup chicken stock and 4tbsp of half and half simmer until reduced by half. Add 1 tbsp. flour to the sauce and stir with a wooden spoon. Simmer until sauce resembles loose gravy, about 3，4 minutes. Season with salt and black pepper, serve warm with the pork.
白酒 ¼ 杯

2-3 tbsps sugar
1/2tsp vanilla extract
2tbsp melted butter
1/2 cup all purpose flour
- In a blender combine everything and process until smooth.
- Heat a skillet over medium heat and brush with little oil. Pour 1/4 cup of crepe batter into pan, tilting to completely coat the surface of the Skillet. Cook total 1-2 minutes, turning once, until lightly golden. Repeat with remaining batter.
- Decorate with your favor fruit, and garnish with powdered sugar or chocolate syrup.
2.熱平底鍋中刷少少油。1/4 杯的麵糊倒入平底鍋，傾斜表面使之摊平。中火总共煎 1-2 分鐘，中间翻面一次，直到浅金色。重複與其余的麵糊。
Two small Chinese long eggplants
A few white mushrooms
2/3 box of firm tofu
A few pieces funguses
½ cup broth
½ tbsp. dark soy sauce
1.5 tbsps. light soy sauce
1/2 tbsp. oyster sauce
2.5 tbsp. white rice vinegar
½ tbsp. hot oil
1tsp chicken powder
3 tbsp sugar
Add everything for sauce together and microwave it for one minute
Cut tofu into thin triangle pieces, pan fried each side in a non-stick pan until each side is golden brown.
Cut eggplants also into small pieces and wrap them with some sweet potatoes starch so they won’t absorb too much oil.
In the same non-stick pan add 3 tbsp of vegetable oil and sautéed eggplants until they are soft, take them out of pan and set aside.
In the same pan, add 2 more tbsp of oil and sautéed white part of scallion and some mince garlic first then add the sliced mushrooms and continue cook for 2 minutes.
Add the eggplants and tofu to the pan then add the sauce and mix well, add a few tbsp of corn starch mixture to thicken the sauce. Add the green part of scallion at the end.
