Beef Short Ribs with Asparagus/牛仔骨炒芦笋

I love Beef short ribs a little too much recently (no wonder I gained weight!!!!). Today I cooked another beef short ribs dish. It is similar to my onion with beef short ribs I cooked 2 days ago. If you like your asparagus crunchy then cook them in boiling water for one minute then take them out and leave them in ice cool water to cool it down. Then saute with garlic (or other vegetables) and beef short ribs for 2 minutes just like how I cook them with onion.

最近吃牛仔骨有点上瘾了。 今天又煮了一道跟前2天差不多的菜。 今天用了芦笋。 如果你喜欢吃脆脆的芦笋那就在滚水了煮1分钟,马上捞起来放冰水里泡。 然后加蒜头炒2分钟就可以了。

洋葱快炒牛仔骨/Onion With Beef Short Ribs

牛仔骨 375克

生抽1大勺

盐1/4茶勺

蚝油2大勺

鸡粉1/2茶勺

香油1/2茶勺

料酒1.5大勺

蒜头一颗切碎

小号洋葱 ½颗切丝

西芹3根切丝

洋葱 ½个切丝

红葱头2个切碎

牛仔骨放一大盆里加入水和1茶勺的苏打粉泡1-2个小时。

牛仔骨放水下冲到到没有血水为止。

把以上1中所有剩下的材料都加入到牛肉中搅拌均匀放冰箱腌个1-2小时。腌的越久越入味。

在一平底锅里加入3-4大勺的油,热油加入牛仔骨快炒3分钟盛出。

再加2大勺的油, 油热后加入洋葱和红葱先炒1-2分钟后加入西芹稍微再炒1 分钟加入1/4茶勺的盐,加入牛仔骨了, 炒匀后浇上1大勺的料酒就可出锅了。

Beef short Rib 375 g

Soy sauce 1 tablespoon

Salt 1/4 teaspoon

Oyster sauce 2 tablespoons

Chicken powder 1/2 teaspoon

Sesame oil 1/2 teaspoon

Cooking Wine 1.5 tablespoon

Garlic 1 clove chopped

½ Small onion sliced

3 stalks of celery shredded

½ Onion shredded

2 red shallots chopped

Beef short ribs cut into small pieces and put all into a large bowl, add cold water and 1 teaspoon of baking soda for 1-2 hours.

Run the ribs under the water until the water is clear and no blood. Drain.

Add the rest of the ingredients in 1 to the ribs and marinade for 1-2 hours. The longer the better flavor.

In a saucepan add 3-4 tablespoons of oil, heat up the oil and stir-fry ribs for 3 minutes. Set ribs aside.

Add 2 more tablespoons of the oil in the same pan, heat up oil again, add the onion and shallot and stir-fry for 1-2 minutes first and then add celery and sauté for 1 more minute add 1/4 teaspoon salt and ribs, then pour 1 tablespoon cooking wine and mix well.

 

Noodles With Meat Sauce/炸酱面

牛肉末半磅(80%瘦20%肥)

黄豆酱 3大勺

甜面酱 1.5大勺

水2/3 杯

糖1.5大勺

鸡粉1茶勺

干面 270克

姜蓉1茶勺

蒜蓉1茶勺

红萝卜丝少量

小黄瓜丝少量

鸡蛋2颗

鸡蛋打匀摊成鸡蛋饼后切丝

烧开一锅水后放入干面煮4-5分钟,捞起。

锅中加3大勺油放入姜,蒜蓉炒香。

加入牛肉末炒到肉变色后放入黄豆酱,甜面酱炒到酱和肉均匀混合。

加入水,糖后中火煮大概8分钟,出锅前加鸡粉。

面条盛在碗里,浇上肉酱, 加红萝卜丝,小黄瓜丝和鸡蛋丝。开吃!

 

Ground beef ½ pound (80% lean 20% fat)

Soy bean sauce paste 3 tbsps

Sweet sauce 1.5 tbsps

Water 2/3 cup

Sugar 1.5 tbsps

Chicken powder 1 teaspoon

Dry noodles 270 g

Ginger 1 teaspoon

Garlic 1 teaspoon

Shredded Carrot some

Whisk egg and make 2 thin egg pancakes and cut into shred.

Boil a big pot of water and cook the dry noodles for 4-5 minutes, drain.

Add 3 tablespoons of oil in a pan add ginger, garlic and stir fry until fragrant.

Add ground beef and cook until meat changes color, add soy bean sauce, sweet sauce and mix well.

Add water and sugar and cook about 8 minutes.

Noodles served in a bowl, pour meat sauce, add shredded carrot, cucumber and egg mix everything together. Eat!

豆腐牛/Beef with ToFu

牛肉 10安士/beef 10 Oz.

几片葱/A few pieces of scallion

嫩豆腐1磅/soft Tofu 1lb

酱汁/Sauce

耗油/Oyster sauce 1.5 tbsp

生抽/Light Soy sauce 1 tbsp

高汤/Broth ¾ cup

糖/Sugar 1tsp

白胡椒少许/ Little bit of white pepper

鸡粉半小勺/ ½ tsp of chicken powder

料酒1小勺/cooking wine 1tsp

Sliced beef and marinate with little bit of salt, white pepper, cooking wine and 1-2 tbsp of sweet potato starch for at least 30 minutes.

In a hot skillet add 4 tbsp of oil then add beef when the oil is not yet hot and cook until color turns brown and set aside. With the rest of oil in the skillet add white part of scallion, sautéed for 1 minute then add sauce, beef and thin sliced tofu and bring it to boil. Add green part of scallion and a few tbsp. of sweet potatoes water mixture to thicken the sauce a bit, add a few drop of sesame oil.

牛肉切成薄片和一點點鹽、 白胡椒粉、 料酒,1-2 湯匙的紅薯澱粉醃至少 30 分鐘。

熱锅中加 4 湯匙油加牛肉炒到顏色变為棕色,待用。剩油在鍋中加入葱白炒1 分鐘然後添加酱汁、 牛肉和豆腐片煮开。加蔥綠色部分和幾湯匙的水淀粉勾芡醬汁,加幾滴麻油。

 

Ox Tripe In Hot Oil Sauce/红油百叶

牛百叶 12盎司

红油 1大勺

生抽 1.5大勺

白醋 1.5 大勺

盐 2/3茶勺

糖 1.5大勺

蒜末 2 颗

把酱料的材料全放一碗里搅拌均匀。

牛百叶放滚水里煮 2 分钟, 捞起放冰水里。浸泡几分钟后挤干水分放盘中。 浇上酱汁就可以食用了。

 

Ox tripe 12 oz

Hot oil 1 tbsp

Light soy sauce 1.5 tbsp

Rice Vinegar 1.5 tbsp

Salt 2/3 teaspoon

Sugar 1.5 tablespoon

Minced garlic 2 cloves

 

Put all the ingredients for sauce in a bowl and mix well.

Cook ox tripe in boiling water for 2 minutes, remove and put them in ice water. Drain water from ox tripe then place them in a place. Pour the sauce over ox tripe.

Beef With Bell Pepper In Oyster Sauce/蚝油彩椒牛

牛肉 150克

彩椒 200克

这道菜简单但不简单: 煮起来快捷,但吃起来却无比美味。

牛肉切丝, 加少量盐, 料酒,鸡粉和1大勺的淀粉腌制30分钟。

彩椒切丝

放3 大勺的油在热锅里,放入牛肉大火翻炒到牛肉变色大概2-3 分钟加入彩椒继续快火翻炒2分钟后盖上锅盖煮2 分钟;加入1.5大勺的蚝油, 一大勺的料酒, ½小勺的鸡粉就可以出锅了。

因为大火炒的缘故这道菜的特点是牛肉鲜嫩美味彩椒清香扑鼻。

Beef 150 g

Bell pepper in different colors 200 g

This dish is simple but not simple: quick preparation, but very delicious to eat.

Beef shredded, add some salt, cooking wine, chicken powder and 1 tablespoon of starch to marinate for 30 minutes.

我用了之前做面包的方子做了汉堡包, 非常成功。我用一半的量做了4个包。

牛肉加奶酪丝,1茶勺盐,1 茶勺黑胡椒,2 汤勺Worcestershire 汁均匀拌好,分成4等分,做成中间凹下去的薄饼状。

用桌面式小烤炉烤汉堡牛肉大概3-4分钟,看你要牛肉几成熟。

在一炒锅里放1汤勺的油,加入切片的蘑菇炒几分钟,加一点的盐和黑胡椒,放1汤勺的half and half, 备用。

把汉堡包切半, 在底下那块包上抹些mayonnaise, 放上2片番茄,一片生菜,牛肉,最后加蘑菇。

I used my bread recipe to make my own hamburger buns, and it was very successful. I used half the ingredients to make 4 buns.

Add shredded cheddar cheese, 1 teaspoon salt, 1 teaspoon black pepper, 2 tablespoons Worcestershire sauce to beef, mix well and divide into 4 equal portions, make a 2 inch wide indentation in the center of each patty to prevent the burgers from bulging when gilled.

Grill beef Patties with desktop small electrical griller for 3-4 minutes.

Put 1 tablespoon of oil in a wok, add sliced mushrooms Sautee for a few minutes, add a little salt and black pepper, 1 tablespoon of half and half, and set aside.

Burger cut in half, on the piece at the bottom put some mayonnaise, place 2 slices of tomato, one slice of lettuce, then beef add mushrooms.

Red Wine Oxtail/红酒烩牛尾

Oxtail 1 pound

One big beefsteak tomato

One medium size yellow onion

1 carrot

Water 1 cup

Red wine 1.5 cup

Thyme 3-5 grams

Cut all the vegetables into big chunks.

In a hot pan, add 2 tbsp of oil, pan fried each side of ox tail until golden brown, set aside.

In the same pan add 2 more tbsp of oil and add onion, carrot and stir fry for a few minute or until onion is tender, add oxtail, tomato, thyme, water, red wine and ½ tsp salt. Bring the whole thing to boil then turn the heat to medium low and simmer for 1.5 hours. I bought oxtail from Chinese supermarket and they were sliced thin. Normal this dish should use the big chunk oxtail, so you should cook a little longer than that.

牛尾

牛尾 1 磅

一個大番茄

燒熱平底鍋,加入 2 湯匙油,煎每側的牛尾直到金黃,待用。

在 同一鍋中添加多 2 湯匙油加洋蔥、 胡蘿蔔炒幾分鐘或直到洋蔥是变软嫩,加牛尾、 番茄、 百里香、 水、 紅酒和半茶匙鹽。大火煮开後调至文火燉 1.5 小時。我從中國超市買的牛尾巴被切得较薄。正常這道菜應該使用大塊牛尾,所以你應該煮稍長些。

Beef WithTofu/金砖豆腐牛

Ground beef ½ pound

Firm Tofu 1 pound

Marinate beef with 1 tbsp oyster sauce, 1.5 tbsps light soy sauce, ½ egg white, a little bit of white pepper and chicken powder and 2 tbsps sweet potato starch for 30 minutes. Mix the meat in one direction for a few minutes until beef is very sticky.

Cut tofu into two big pieces and scoop the middle part of tofu out, add the beef into the holes we just dig and smooth the surface. Add 2 tbsp oil into a hot skillet, pan fry each side of tofu until golden brown and move tofu to a flat plate steam over boiling water for 10 minutes. In a small bowl, mix soy sauce, water, white rice vinegar, sugar(1:2:1:1),1/2 tsp chicken powder, 1 tbsp cooking wine and 3 tbsp sweet potato starch water. Bring the sauce to boil then pour over the tofu beef.

Sirloin Stew With White Radish/牛腩燉白蘿蔔

Sirloin 2 pounds

White radish 3 pounds

Vegetarian mushroom Oyster sauce 5 tbsp

Soy sauce 4 tbsp

Sugar 3 tbsp

Ginger 2 slices

Cooking wine 1 tbsp

Star aniseed 2 pieces

Water 1/3 cup

Blanch the sirloin in boiling water for about 3 minutes and then wash them with running cold water. In a pressure cooker add all the ingredients except white radish, and cook 10 more minutes after the steam comes out of the vent and the weighted pressure regulator begins to jiggle. Turn the gas off and let the pressure all comes out of the pressure cooker and totally cool down, open the pressure cooker and add the white radish and cook for 10 more minutes after the pressure regulator begins to jiggle.

Tips: Different pressure cooker will have different power, adjust your cooking time accordingly. If you like it spicy, add a few pieces of dried red pepper.

牛腩燉白蘿蔔

牛腩 2 磅

白蘿蔔 3 磅

香菇素耗油 5 湯匙

醬油 4 湯匙

糖 3 湯匙

生薑 2 片

料酒 1 湯匙

八角茴香 2 颗

1/3 杯水

牛腩在滾水中焯煮約 3 分鐘,然後用冷水沖洗。在壓力鍋裡添加除了白蘿蔔以外所有的食材,当蒸汽從通風口出来时(壓力調節器開始搖晃)吱吱作响后再煮 10 分鐘。把煤氣關掉讓高壓鍋内所有的壓力完全跑掉,打開高壓鍋加白蘿蔔蓋上盖子当蒸汽從通風口出来吱吱作响后再煮 10 分钟。

小貼士: 不同壓力鍋將有著不同的压力,你的烹飪時間应做相應的調整。如果你喜歡辣,添加幾只幹紅椒。

In the boiling water precook any kind of noodles with some vegetable, then bring the noodles and vegetable to a big bowl, add Sirloin stew with white radish and some broth, it is another simple but fulfilling dish.
