Spring Rolls/春卷

This is a simple bean sprout dish. It is a very traditional Fujianese dish I ate all the time when I was little.

One pound bean sprout

2 slices of ginger cut into thin strips

3 pieces dried mushroom

Pork or beef 3 oz.

Chinese celery 1/3 cup

Braised dried tofu 1 piece

Crab stick 2 sticks

Soak the dried mushroom in water for at least 1 hour, cut into strips.

Chinese celery, meat and dried tofu also cut into strips. Marinate the meat with salt, cooking wine and chicken bouillon.

Heat up a skillet then add 3 tbsps oil, add meat first and saute until the color turn white about 3 minutes.

Add ginger and continue to cook for a minute, then add the rest of ingredients. Stir fry for about 5 minutes.

Over the holidays, we used to buy spring roll wraps to make this Non-fried spring rolls with it. I used to love it so much. Nowadays, we have so much food in this country and I don’t really eat this roll any more. I don’t remember when was last time I ate it. It is good to bring some good memories back.

Purslane Pork Buns/马齿苋肉包

I  just recently discovered this amazing vegetable: purslane. I don’t know if this is familiar to everyone, but I do see Mexican people are eating it. I went to farmer’s market yesterday and I saw they sold it for $2 a big bunch. I bought 2 bunches home and decided to use some of them to make steam buns. This vegetable has a hint of sour taste in it, and it is perfect for summer.

Stuffing:

Purslane 500 g

Pork belly 200 g

Soy paste 1 tbsp

Soy sauce 2 tbsps

Sugar 1.5 tbsps

Cooking wine 1.5 tbsps

Chicken bouillon 1 tsp

Sesame oil 1/2 tbsp

Dice the pork into small pieces, add the soy paste, chicken bouillon and cooking wine to it and marinate for at least 30 minutes.

Precook purslane in boiling water for 2-3 minutes, then rinse it with cold water. Squeeze as much water out of the vegetable as possible.

Chop the vegetable really fine. Add it to the pork, then add the rest of sauce/spices. Mix everything together.

我最近才发现了这种神奇的蔬菜: 马齿苋。我不知道是不是每个人都熟悉它, 但我有看到墨西哥人卖它。昨天我去了趟农贸市场, 我看到他们卖2美元一大捆。我买了2捆回家, 决定用一些来做蒸包子。这种蔬菜带一种酸的味道, 夏天吃很完美。

馅料:

猪肉200克

酱油膏1汤匙

酱油2汤匙

糖1.5 汤匙

料酒1.5汤匙

鸡精1茶匙

马齿苋500克

芝麻油 1/2 汤匙

将猪肉切成小块, 加入酱油、鸡精和料酒腌至少30分钟。

在滚水中 煮马齿苋2-3 分钟, 然后用冷水冲洗。尽可能的把蔬菜里的水挤出来。

把蔬菜切细后加到猪肉里, 然后加入其余的酱油/香料。搅拌在一起。

Cucumber Salad/凉拌小黄瓜

English cucumber 1

Sweet chili Sauce:

Thai sweet chili sauce 1tbsp

Water 2 tbsps

Sugar 2tsps

Rice Vinegar 1.5tbsps

Garlic 1 clove (minced)

Salt ½ tsp

 

Savory sauce:

Soy sauce 3tbsps

Shallot oil 1tbsp

Chicken Bouillon 1/2tsp

Balsamic vinegar 1tbsp

Garlic 2 cloves(minced)

Hoisin sauce 2tsp

Sugar 1/2 tbsp

Mix the ingredients for sauce together and mix well.

Peel some of the skin off the cucumber to make it look prettier.

Cut 90 degrees straight down to 2/3 the wide of the cucumber on one side.

Turn the cucumber to the other side and cut 45 degrees tilted down to 2/3 the wide of the cucumber on the other side.

Pour 2-3 cups of water to a big bowl, add 2tsps salt and dissolve.  Leave the cucumber we just cut in the water for 15 minutes.

Get the cucumber out of salted water and gently squeeze the excess water.

Circle the cucumber in a plate the pour the sauce over it.

This is a super healthy and delicious dish for hot summer. You can make different kind of dressings for it. When you cut the cucumber, make sure don’t cut it through if you want to impress others. The first time when I made it, I cut it a little to thick so it didn’t look as pretty as the second one.

把酱汁调味料混合在一起, 拌匀。

刮掉黄瓜上的一些皮, 使它看起来更漂亮。
在黄瓜的一面以90度直切黄瓜至2/3 的宽度。
把黄瓜转到另一边, 以45度斜切黄瓜到 2/3的宽度。
倒2-3 杯水到一个大碗里, 加入2茶匙盐搅拌溶解。 把黄瓜放在水里15分钟。
把黄瓜从咸水中取出, 轻轻地挤掉多余的水。
把黄瓜盘放在盘子里倒上酱汁。
炎炎夏日这是一个超级健康和美味的凉拌菜。你可以做不同的酱汁来陪它。当你切黄瓜的时候, 小小不要把它切断。我第一次做的时候, 我切的有点厚, 所以它看起来不如第二个那么漂亮。

Seaweed Salad

Everyone knows seaweed is very good to our health, but to be honest with you, I don’t really cook seaweed because it requires a lot of time to cook. However my neighbor brought me this cooked dried seaweed saves all the troubles for me. All I need to do is soak it in boiling water for a few minutes, and it is ready to eat. I will try to cook it with ribs next time! Yum! If you can’t find this from supermarket, cook the seaweed first then do this salad. It may take your more time, but it is totally worth! It has the fresh sea flavor in this dish and it is so healthy (recommended for diet).

Dried cooked seaweed 20g

Soy sauce 3tbsps

Shallot oil 1tbsp

Chicken Bouillon 1/2tsp

Balsamic vinegar 1tbsp

Garlic 2 cloves(minced)

Hoisin sauce 2tsp

Sugar 1/2 tbsp

Add 2 cups boiling water to the dried seaweed and soak for 5-10 minutes, then rinse.

Mix all the ingredients for sauce together and mix well.

pour the sauce over the seaweed, add some cilantro and scallion for more flavor.

干熟海藻20克

酱油3汤匙

葱油1汤匙

鸡精1/2 茶匙

香醋1汤匙

大蒜2粒 (切碎)

海鲜酱2茶匙

将2杯沸水倒入干海藻中浸泡5-10 分钟, 然后冲洗。

把所有的调味料混合在一起。

将酱汁倒在海藻上, 加入一些香菜和葱来调味。

Cabbage Saute With Vinegar/醋呛包菜

Taiwanese cabbage 750g

Shredded carrot 2tbsps

Garlic 2 cloves (minced)

Scallion 1 piece

 

Direction:

Cut cabbage。

Preheat a skillet then add 3 tbsps cooking oil to the skillet, add all the vegetables to the skillet.

Saute the vegetables for 3 minutes, add 1/2 tsp salt, 1/2 cup broth or water to the vegetables. Cover with a lid and cook for 7 more minutes.

Add 2tsps sugar, 1.5 tbsps white rice vinegar, 1/2 tsps chicken bouillon to the vegetables and mix well.

This is one of my favorite vegetables, I like Taiwanese cabbage because it is not as hard as the regular cabbage. Also it doesn’t require as much time to cook it. Adding vinegar and sugar to it can bring out more sweetness of the vegetable. If you like it softer, cook 2 more minutes. Give it a try and you are going to love it. It is delicious and healthy!

臺灣捲心菜/高丽菜750克

做法:

捲心菜切片。

預熱一個炒鍋, 然後加3湯匙烹調油, 加入所有的蔬菜。

將蔬菜炒3分鐘, 加入1/2 茶匙鹽, 1/2 杯清湯或水。蓋上蓋子, 再煮7分鐘。

加2茶匙糖, 1.5 湯匙白米醋, 1/2 茶匙雞肉精蔬菜拌勻。

這是我最喜歡的蔬菜之一, 我喜歡臺灣捲心菜, 因為它不像普通捲心菜那麼硬。而且它不需要太多的時間來烹調它。添加醋和糖, 可以帶出更多的蔬菜甜味。如果你喜歡它更軟一些, 多煮2分鐘。嘗試一下你會喜歡它的。它既美味又健康!

Rib Eye Steak with Mix Vegetables/杂菜炒牛脊肉

I bought 3 pieces of rib eye steak the other day, I ate one just grill, then steak fajita and taco. I was thinking to make it with Chinese mix vegetable, so here is how I cook it Chinese style.

Rib eye steak 7oz.

1/4 leek

cherry tomato 4

Shredded carrot 3 tbsps

Small red onion 1/2

Medium green pepper 1/3

Garlic 1 clove

Direction:

Thin slice steak.

cut cherry tomato into halves

Smash garlic

Cut the rest of vegetables into thin shreds.

Add 1/3 cup oil into a hot skillet, add steak to the oil and cook until the color turn brown about 60- 70 seconds depends on how thin you slice the steak. Don’t over cook it. Take the steak out of the skillet.

Leave about 2 tbsps oil in the skillet, add garlic, carrot, leek and red onion and stir fry for 2 minutes.

Add the rest of the vegetables and steak to the skillet alone with 2tsps oyster sauce, 1tbsp light soy sauce continue to stir fry for 2 minutes.

Add 1.5 tbsps Chinese cooking wine and 1/3 tsp chicken bouillon and mix well.

This is a quick dish, it took me about 15 minutes including preparing and cutting. For a good piece of steak like this, the meat doesn’t need to be Marinated. I used very few sauce or spice to cook it so we will eat the most original flavors from the steak and the fresh vegetables. I really enjoy the sweet and a little sour flavor from the cherry tomato. Wonderful!!!

加1/3 杯油到一个热过的锅里, 加牛排到油里炒到变棕色约 60-70 秒取决于你切牛排的厚度。不要过度炒牛肉,嫩一点好吃。把牛肉从锅里盛出来。

留下约2汤匙油在锅里, 加入大蒜, 胡萝卜, 蒜苗和洋葱, 炒2分钟。

把剩下的蔬菜和牛排加到煎锅里外加2茶匙蚝油, 1汤匙生抽继续炒2分钟。

最后加入1.5 汤匙料酒和1/3 茶匙鸡肉精, 拌匀。

这是一个快菜, 它总共花了我大约15分钟时间, 包括准备和切洗。吃这么好的牛排, 肉不需要腌。我用很少的酱料来烹调它, 因为就是要吃牛排和新鲜蔬菜的原味。我真的很喜欢樱桃西红柿的微甜微酸的味道。美妙!!!

Roasted Vegetables/烤时蔬

I made a real simple meal tonight after watching a video. I didn’t expect this dish to be this good; it turned out to be not only delicious but also beautiful. So if you want to wow someone but doesn’t want to spend a lot of time in the kitchen this is a good choice.

I didn’t really measure ingredients because I didn’t think I would post it here. So I will tell you what I used without amount. Some colorful vegetables that are good for roasting, anything you have in your fridge. Olive oil, salt, black pepper and little bit of balsamic vinegar.

Cut all the vegetables even in size,place them evenly on a baking sheet.

Sprinkle salt, black pepper, olive oil and drizzle a little bit of balsamic vinegar.

Bake in preheated oven 425F for 20 to 25 minutes. (adjust time accordingly if you make more)

我最近想减肥,所以晚上吃的很清淡。前几天看了一个视频是烤时疏就想做因为我家正好也很多蔬菜。 我没想到做出来不仅好吃还好看。

因为没有想到要摆到这来所以就没有测量用量,但是这道菜很简单,我跟你们说说材料也是一样的。 把家里颜色好看适合烤的蔬菜拿来做就对了。盐,黑胡椒粉,橄榄油外加一点点的香醋。

菜切成大小差不多的块。

在烤盘里均匀摆开,撒上盐,黑胡椒粉,橄榄油和一点点的香醋。

放入预热好425华氏度的烤炉中烤大概20 到25 分钟。如果烤的多要相对调整时间。

 

Stem Lettuce Salad/凉拌莴笋

It is 1 serving and about $1 in total.

Stem lettuce 150g

Salt 1/3 tsp

Light Soy sauce 1tbsp

Sugar 1/2tbsp

Rice vinegar 1 tsps

Chicken bouillon 1 tsp

Peel the hard skin of stem lettuce off then cut it into thin slices.

Add salt and mix, let stand for about 20 minutes. Discard the water from the vegetable.

Add the rest of ingredients to the vegetable and marinate for a few hours.

莴笋150克

盐1/3 茶匙

酱油1汤匙

糖1/2 汤匙

米醋 1 茶匙

鸡精1茶匙

削掉莴苣的硬皮, 然后切成薄片。

加入盐混合, 腌约20分钟。把莴笋出的水倒掉。

把剩下的配料加到莴笋里腌几个小时。

Pork And Mixed Vegetables In Broad Bean Sauce/豆瓣酱杂菜肉丝

This dish is super delicious, I didn’t expect it to be this good. I just bought the spicy broad bean sauce yesterday, I love spicy but I can’t eat too spicy, so I didn’t use too much; and besides it is very salty so don’t use too much if you have never tried it before.

Pork 100g

One big Bell pepper

Half small Yellow onion

A few shreds of purple onion for color

A few shreds of carrot for color

Half Fruit Kohlrabi

Shred pork and marinate it with salt, chicken bouillon, corn starch and cooking wine for at least 30 minutes.

Shred all the vegetables.

Add 3 tbsps cooking oil to the skillet and heat it up.

Add pork to the skillet and cook for a few minutes until they totally turn white and take them out, set aside.

Add 2tsps broad bean paste sauce to the oil and stir a little.

Add yellow onion, fruit kohlrabi and carrot to the skillet and stir fry them for 3 minutes.

Add the rest of vegetables and pork to the skillet and stir fry for another 3 minutes, add 2tsps oyster oil, 1tsp chicken bouillon, 1tsp sugar and mix everything together.

Finish the dish by adding 1 tbsp cooking wine.

猪肉切丝, 用盐、鸡精、玉米淀粉和料酒腌至少30分钟。

所有的蔬菜切丝。

在平底锅里加3汤匙食用油, 加热它。

把猪肉加到煎锅里, 炒几分钟, 直到它们完全变白, 取出来, 放到一边。

加入2茶匙 郫县豆瓣酱, 稍微炒一下。

将黄洋葱, 大头菜和胡萝卜放入锅中, 快炒3分钟。

把剩下的蔬菜和猪肉加到锅里, 再炒3分钟, 加入2茶匙 蚝油, 1茶匙 鸡精, 快炒混合。

加入1汤匙料酒喷香。

Black Fungus Salad/凉拌木耳

This is a very easy dish, almost need no effort to cook it.

Sauce:

Soy sauce 2tbsps

Sugar 1/2tbsp

Water 4tbsps

Oyster sauce 1/2 tbsp

balsamic vinegar 1tbsp

White pepper 2 pinches

Minced garlic 2tsps

Chicken powder 1/2 tsp

Olive oil 1.5tbsps

Hot oil 1tsp

Cook the black fungus in boiling water for 3-4 minutes, set aside.

Mix the ingredients for sauce in a small bowl.

Pour the sauce over the fungus and it is ready to serve.

 

酱汁:

酱油 2汤匙

糖1/2 汤匙

水4 汤匙

蚝油1/2 汤匙

香醋1汤匙

白胡椒一点

蒜茸2茶匙

鸡肉粉1/2 茶匙

橄榄油1.5 汤匙

辣油1茶匙

黑木耳在滚水中煮3-4 分钟, 放在一边。

在小碗里混合调味汁。

把调味汁倒在木耳上, 就可以上菜了。
